Basmati is a long-grain aromatic rice grown in the Indo-Gangetic plains of northern India. The grains lengthen considerably on cooking and stay separate, which is why basmati is the first choice for biryani, pulao and restaurant use.
Varieties
- 1121 — extra-long grain and very high elongation on cooking; the most widely exported Indian basmati
- 1509 — a shorter-duration variety with long, slender grains, often a value alternative to 1121
- 1401 and Pusa basmati — aromatic varieties with good cooking quality
- Sugandha and Sharbati — aromatic long-grain rice bought as economical options

Basmati Rice: frequently asked questions
What is the difference between steam and sella basmati?
Steam basmati is made by briefly steaming the paddy before milling, which gives firm, non-sticky white grains. Sella (parboiled) rice is soaked, steamed and dried before milling, making the grains firmer and more resistant to breaking; golden sella has a golden colour, white sella a lighter one.
Why does aged basmati cost more?
Ageing basmati for several months lowers moisture and improves elongation and fluffiness on cooking. Storage costs and weight loss during ageing make aged rice more expensive than new crop.
