Dehydrated onion and garlic are shelf-stable ingredients made by slicing fresh bulbs and drying them to a low moisture content. They are bought by variety — white, red or pink onion, or garlic — and by particle size, from large flakes down to fine powder, so food manufacturers can choose the form that suits their process.
A large share of India's onion dehydration industry is based around Mahuva in Gujarat's Bhavnagar district, close to our office in Bhavnagar.

White, red or pink onion?
- White onion has a light colour and a milder taste — preferred where colour matters, such as white sauces and soups.
- Red onion has a stronger pungency and a reddish tint.
- Pink onion sits between the two in colour and flavour, often at a lower price.

Which forms of dehydrated onion and garlic are available?

What is the difference between onion granules and onion powder?
Both are milled from dried onion. Granules are a coarser, free-flowing particle that stays visible in seasonings; powder is the finest grade and blends invisibly into sauces, soups and spice mixes. The exact size is agreed by mesh in the specification.
