Dehydrated onion is sold by particle size. Picking the right grade depends on how it will be used.
The five standard grades
| Grade | Size | Typical use |
|---|---|---|
| Flakes (kibbled) | 10–25 mm | Soups, ready meals |
| Chopped | 3–5 mm | Sauces, pickles |
| Minced | 1–3 mm | Seasoning blends |
| Granules | 0.5–1 mm | Snack seasoning |
| Powder | 80–100 mesh | Spice mixes, dry rubs |
White, red or pink?
White onion gives a clean, sharp flavour and pale colour — the choice for most food manufacturers. Red and pink onion carry a sweeter taste and a visible colour.
What to check on a spec sheet
- Moisture: 6% maximum
- Total ash: 4.5% maximum
- Microbiology: TPC, yeast & mould, E. coli, Salmonella
Ask your supplier for a certificate of analysis for every lot.
