White onion flakes are made by slicing, drying and grading fresh onions into the largest cut — dried slices broken into flakes, also called kibbled. Flakes rehydrate in a few minutes and look like sliced fresh white onion in the finished dish.
White onion has a light colour and a mild, slightly sweet flavour, so it suits products where colour matters — white sauces, creamy soups, dressings and seasonings.
