Whole, split and skinned

  • Whole (sabut) — the complete seed with its husk, for example whole green gram (moong) or whole black gram (urad)
  • Split with husk (chilka) — the seed split in two with the husk left on
  • Split and skinned (dal) — split and dehusked, which cooks faster

How pulses are specified

  • Size or count — for example kabuli chickpeas by size in mm or count per ounce
  • Moisture, foreign matter and damaged or weevilled grains
  • Cleaning — machine or sortex cleaned, polished or unpolished
  • Crop year — newer crops cook faster and look brighter

Pulses & Beans: frequently asked questions

What is the difference between kabuli and desi chickpeas?

Kabuli chickpeas are larger and cream-coloured with a thin skin; they are used whole in salads, hummus and canned products. Desi chickpeas are smaller and darker and are mostly split into chana dal or milled into gram flour (besan).

Are split and dehusked pulses available?

Yes — split dals such as chana dal, moong dal, urad dal and toor dal are listed alongside whole pulses. Choose the form on each product page or ask for others.

How should pulses be stored after arrival?

In a cool, dry, ventilated store, off the floor. Pulses absorb moisture and attract insects in warm, humid conditions, so keep moisture low and rotate stock.
