Garlic flakes are made by slicing, drying and grading fresh garlic cloves into the largest cut — dried slices broken into flakes, also called kibbled. Flakes rehydrate in a few minutes and look like sliced fresh garlic in the finished dish.
Dehydrated garlic keeps the sharp, savoury character of fresh garlic in a shelf-stable form that is easy to dose, store and ship.
